Rover Mini 1998 MPi - Intermittent boiling of coolant?

Not the best first thread, but I am literally tearing my hair out with my wife 1998 Rover Mini Cooper MPi. :(
A few months ago we had the water pump go, and lost all coolant. Luckily the engine didn’t seize. Anyway I changed the pump, and thermostat whilst I was there and refilled the system. Once it had warmed up, the coolant began to boil in the expansion tank.
Over the next few months I have changed the head gasket (head checked and not warped), I’ve had the water checked for gasses in it, fine. Also changed the expansion tank, the cap (genuine items), the radiator has been changed.
Despite this it is still intermittently boiling the coolant. I say intermittently as I drove from Cardiff to Bath, coolant boiled and lost say 1/4 litre. Topped it up, and drove back, not a bubble. A few short trips around, not a bubble.
Then this morning it was steaming again on my wife on her short (4 mile) journey to work (in slow rush hour traffic)
Anyway, I am out of ideas, just have not got a clue what it could be anymore. Any advice would be greatly appreciated.
